Nothing goes to waste: Winter recipes that warm your heart and your pocket

With a little creativity, leftovers from a Sunday roast or weeknight stew can be transformed into comforting second-day meals. Think leftover roast chicken reimagined as a creamy soup, or mashed potatoes turned into crispy cheese-and-chive fritters. Not only do these dishes stretch the budget, but they also help reduce household food waste, a major contributor to the estimated 10 million tonnes of food discarded annually in South Africa, according to the Council for Scientific and Industrial Research (CSIR).

Smart storage is key. Refrigerate leftovers within atleast two hours, store them in airtight, dated containers, and consume within minimum four days, or freeze them for later use. Always keep your fridge below 5°C and avoid overcrowding to maintain freshness and minimize the risk of food poisoning.
